Yogurt lamb curry

Total Time: Approximately 1.5-2 hours

In a bowl, mix the lamb pieces with yogurt, red chili powder, turmeric powder, and salt. Let it marinate for at least 30 minutes.

Heat ghee or oil in a large pan over medium heat. Add cumin seeds, green cardamom, black cardamom, cinnamon stick, and cloves. Sauté until fragrant. Add the chopped onions and sauté until golden brown. Add the minced garlic, grated ginger, and green chilies. Cook for another 2-3 minutes. Add the chopped tomatoes and cook until they soften and the oil starts to separate.

Add the marinated lamb pieces to the pan. Cook on high heat for 5-7 minutes, stirring occasionally. Reduce the heat to low, cover the pan, and let it simmer until the lamb is tender (about 45-60 minutes). Stir occasionally and add a little water if needed.

Once the lamb is cooked, add garam masala and mix well. Garnish with fresh coriander leaves.
