Preparation Time:10 minutes
Rinse the poha in a colander under running water until they soften. Drain well and set aside.
a. Heat oil in a pan.
b. Add mustard seeds and cumin seeds. When they splutter, add curry leaves and green chilies.
c. Wait for a few seconds.
d. Add chopped onions and cook until they turn translucent. If using potatoes, add them now and cook until they are tender.
a. Add turmeric powder, hing and salt. Mix well.
b. Add the softened poha and sugar (if using). Mix gently to coat the poha with the spices. Cook for 2-3 minutes on low heat.
a. Turn off the heat and add lemon juice. Mix well.
b. Garnish with chopped coriander leaves and serve hot..
