Prepare the Pastry Dough: In a bowl, combine all-purpose flour, semolina (if using), and a pinch of salt. Add melted ghee and mix well until the mixture is crumbly. Gradually add water and knead into a smooth and firm dough. Cover and let it rest for 20-30 minutes.

Prepare the Filling: In a pan, heat 1 tablespoon of ghee. Add grated mawa and sauté for 2-3 minutes until it’s slightly golden. Add sugar, cardamom powder, saffron strands (if using), and chopped nuts. Mix well and cook for another 2-3 minutes until the sugar dissolves. Remove from heat and let it cool.

Shape the Kachoris: Divide the rested dough into small equal-sized balls. Roll each ball into a small circle (about 3-4 inches in diameter). Place a spoonful of the mawa filling in the center. Gather the edges of the dough and seal it to form a ball. Flatten it slightly. Repeat with the remaining dough and filling.

Fry the Kachoris: Heat oil or ghee in a deep frying pan over medium heat. Once hot, carefully slide in the kachoris, a few at a time. Fry until golden brown and crisp, turning occasionally for even cooking (about 5-7 minutes). Remove and drain on paper towels. Serve: Serve the warm Mawa Kachoris as a delicious dessert or snack, optionally garnished with powdered sugar or a drizzle of honey.
