Preparation Time:10-15 minutes
Prepare the Sugar Syrup: In a saucepan, combine 1 cup of sugar and 1 cup of water. Bring it to a boil until the sugar dissolves completely. If using, add 1/4 cup of milk for richness and continue to boil for a couple more minutes. Remove from heat and set aside.
Heat the Ghee: In a heavy-bottomed pan or kadhai, heat 1/2 cup of ghee on medium heat. Roast the Flour: Add 1 cup of whole wheat flour to the hot ghee. Stir continuously to roast the flour until it turns golden brown and gives off a nutty aroma. This process takes about 10-15 minutes. Make sure not to burn it.
Combine Syrup with Roasted Flour: Once the flour is roasted, slowly and carefully add the prepared sugar syrup to the pan while stirring continuously to prevent lumps from forming. Continue to cook on low heat until the mixture thickens and starts to leave the sides of the pan.
Add Cardamom Powder: Stir in 1/4 tsp of cardamom powder for flavor. Mix well. Garnish: Once the mixture reaches a desirable consistency, remove it from the heat. Transfer to a serving dish and garnish with chopped nuts like cashews and almonds.
