Basundi

Boil the milk: In a heavy-bottomed pan, bring the milk to a boil over medium heat. Simmer: Reduce the heat to low and let the milk simmer, stirring occasionally to prevent it from sticking to the bottom. Continue cooking until the milk reduces to about half its original volume (approximately 30-40 minutes).

Add soaked rice: Once the milk has reduced, add the soaked and drained rice to the milk. Stir well. Add sugar: Gradually add sugar and continue cooking on low heat, stirring frequently to ensure the rice cooks through and thickens the milk further.

Add cardamom and saffron: Once the rice is fully cooked and the mixture has thickened, add cardamom powder and saffron strands (if using). Stir to combine. Optional ghee: If you want a richer flavor, you can add 1 tablespoon of ghee at this stage.

Basundi is a delightful dessert that can be enjoyed on its own or served alongside puri, paratha, or as part of a festive meal.
