Amritsari fish

Prepare the Marinade: In a mixing bowl, combine ginger-garlic paste, green chilies, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala, lemon juice, and salt. Mix well to form a thick marinade

Marinate the Fish: Add the fish fillets to the marinade, ensuring they are well-coated. Cover and let them marinate for at least 30 minutes. For best results, marinate for 1-2 hours in the refrigerator. Prepare the Coating: In a separate bowl, mix gram flour and rice flour. You can also add a pinch of salt and red chili powder to the flour for additional flavor. Heat Oil for Frying: In a deep frying pan or kadhai, heat sufficient oil over medium heat. The oil should be hot but not smoking.

Coat the Fish: Take each marinated fish fillet and coat it with the flour mixture. Make sure to coat both sides evenly. Fry the Fish: Carefully slide the coated fish fillets into the hot oil. Fry in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side. Use a slotted spoon to remove the fish and drain on paper towels. Garnish and Serve: Garnish the fried fish with fresh coriander leaves and serve hot with lemon wedges and green chutney.
